Having compared many, and for a variety of prices, I would actually spring for the Rio Volt: http://www.sonicblue.com/audio/rio/riovolt_sp100.asp ($249 Canadian.) Plays CD-r's upon which you can burn 10 albums' worth of mp3's. I carry three discs with me and am never bored. If I am: just grab more discs. Also plays regular cd's.
Key point: it sounds better than the ipod. Ipods have bad audio specs in my opinion. A little too "woofy" in the bottom end and not enough high trebles. I speak from a background in recording.
If you really want a hard-disk based mp3 unit, I recommend the Rio Riot: http://www.sonicblue.com/audio/rio/rio_riot.asp

Adam, have you actually *tried* listening to an iPod? The sound quality through some decent headphones is great! Plus, my iPod survived a 40mph head-on car accident and still played perfectly. Try that with *any* CD player. It took a trip down to stairs to finally kill it (don't ask). The iPod is damn sturdy. Plus, once you try that scroll wheel, you're hooked! Plus, with Windows compatibility, what isn't to like? You can also make the iPod into a contact organizer. There's an equalizer if you're picky about sound quality and I think the next version of the iPod firmware will have Ogg Vorbis support. It even has a little breakout game built in.
There is a ton of things you can do with the iPod. Ipodhacks.com. Don't discount the little Apple that could just yet. Plus, what better reason to get a Mac? Well, that and the tons of Mac-only Photoshop plugins available.
